This is always handy and easy to make, grab your pestle and mortar and let’s get crushing (play the theme song to Planet of the Apes while doing so and make it loads of fun).
1. Throw in a handful of basil leaves
2. Throw in two garlic cloves, a tablespoon of olive oil, a tablespoon of parmesan and a tablespoon of pinenuts and a pinch of salt (vegans can leave out the parmesan and just throw in extra pinenuts).
3. Give it all a good pounding until it’s a fine, fabulous mix.
4. Throw in a couple of mint leaves and repeat your pounding.
5. If you like your food spicy feel free to throw in some freshly cut chilly and repeat the pounding process.
6. You can add more of any of the above ingredients until you feel your pesto is perfectly fabulous.
7. Serve with anything and everything as it is that diverse. Love your pesto!
