For every gem squash you are going to stuff you will need:
• 1 x Carrot
• 1 tablespoon of slivered almonds
• A pinch of salt
• A pinch of black pepper
Steam the carrots and gem squash until they are soft, then leave them to cool down.
Take the seeds out of the gem squash and lightly toast them with the almonds, salt and black pepper.
Mash up the carrots and stir in the toasted seeds and almonds and stuff the mixture into the centre of the gem squash.
Serve up as is or with some fresh fruit on a hot summer evening (as you can see I've used some juicy, fresh grapefruit).
