Dandelion Greens Smoothie


I am a very big fan of smoothies, especially fruit smoothies for breakfast after I’ve cycled 25km. This afternoon, after harvesting some dandelion greens, I decided to make myself a green smooth. I felt the need for an extra vitamin boost, especially iron. I just loved it so much that I had to share it.

Ingredients:
Cup of fresh, cleaned litchis (or half cup of litchi juice)
2 x decent size leaves of spinach
2 x decent sized leaves of Chinese cabbage (bok choy)
A handful of fresh dandelion leaves
A small avocado
A pinch of salt and pepper

Directions:

Mix everything together in the blender except the avocado, salt and pepper. Once everything is well juiced, add in the avocado and salt and pepper to taste.

Because the avocado thickens the smoothies quite a lot, it is best to add it last otherwise you might find difficulty while blending all the ingredients together, and you may end up with large chunks of leaves, which don’t go down too well in a smoothie I find.
