Ingredients
- 10 sticks of rhubarb
- 4 tablespoon water
- 8 tablespoon caster sugar
- 1 teaspoon powdered cinnamon
- 2 tablespoon vegan friendly margarine
- 1 cup sugar
- 1 cup flour
- 1 teaspoon vanilla essence
Preparation
method
1.
Preheat the oven
to 180C/350F/Gas 4.
2.
Cut the rhubarb
into 2cm chunks and place on an oven tray with the water and caster sugar and
roast in the oven for 10 minutes.
3.
Remove from the
oven, sprinkle over the cinnamon and vanilla essence and mix well.
4.
Fill an ovenproof
dish about 4cm/1½in deep with the rhubarb.
5.
Rub the margarine into the flour and sugar to make the crumble topping. Sprinkle over the rhubarb
and bake in the oven for 25-35 minutes, or until the crumble topping is crisp
and golden-brown and the rhubarb filling has softened and is bubbling.
6.
Serve warm with
custard or ice cream.
