You will need:
For the batter:

1 x Egg
·
1 x cup flour
·
½ x cup of sugar
·
1 x tablespoon cocoa powder
·
½ x cup cold water
·
½ x cup soy milk
·
1 x teaspoon salt
·
1 x teaspoon cayenne pepper
·
1 x tablespoon oil
Topping:
·
1 x tablespoon cinnamon
·
½ x cup of sugar
·
Oil for frying
Mix all the dry batter ingredients together in a bowl.
Mix in the tablesppon of oil into the dry ingredients until appears to
have a breadcrumb like texture.
Create a well in the centre of the ingredients and add the egg and
water. Whisk briskly to form a thick batter. Once thoroughly mixed, add the soy
milk and mix in thoroughly for a batter than can be easily poured.
Leave batter in fridge for at least 30 minutes before using it.
Heat up a frying pan, with a tablesppon of oil in.
Pour two table spoons of batter into the pan to create a flat pancake,
and fry until cooked on both sides, turning pancake over.
Place on plate and sprinkle top of pancake with the cinnamon and sugar
mix. Then roll and cut the pancake into small rolls. Serve warm.
Mixture makes 4 to 8 servings, depending on size of pancakes.
Serving suggestion: With ice cream
