Kiwi Potato Salad



This potato salad is fast becoming a favourite at gatherings with friends, the real star of the show though is the ginger mayonnaise dressing that suits it perfectly.

Salad ingredients:
4 x large potatoes.
3 x kiwi fruits
2 x tomatoes
1 x tin of chickpeas
Salt and black pepper to taste

Cube the potatoes and boil until soft, leave to cool. Chop up kiwi fruits and tomatoes and add to potatoes. Add tin of chickpeas and salt and pepper.

Ginger Mayonnaise dressing

1 x tablespoon grated ginger
½ x teaspoon cinnamon powder
5 x tablespoons vegan friendly (egg free) mayonnaise
2 x tablespoons honey
1 x sprig of fresh mint, finely chopped
3 x tablespoons hot water
2 x tablespoons apple cider vinegar

Dissolve the honey in the hot water. Add the ginger, cinnamon, mint and apple cider vinegar and mix well. Add the mayonnaise and mix thoroughly.


Add the dressing to your salad. Salad serves up to four people.
