Cake in a mug recipe
Ingredients:

¼ cup all-purpose flour
·
2 tbsp. unsweetened cocoa powder
·
¼ tsp. baking powder
·
2 tbsp. granulated sugar
·
Pinch of salt
·
¼ cup + 1 tbsp. Cold water
·
2 tbsp. vegetable oil
·
2 tbsp. Raisins or vegan friendly, dark chocolate chips
Instructions:
In a medium bowl, whisk together dry ingredients and raisins or chocolate
chips.
Whisk in the water and vegetable oil until all ingredients are combined
and batter has no clumps.
Pour batter into a large microwave-safe mug. As big as possible to
prevent the batter from overflowing but you can place a paper towel into the
microwave and set the mug on top (this is to catch any batter if your mug cake
overflows). Alternately you can pour the mixture into two smaller
microwave-safe mugs, as this does make a lot of cake.
Microwave mug cake for 70 seconds on high. If you are using two smaller
mugs, then make it 60 seconds, and do only one mug at a time.
