When I met my wife many moons ago, she was not really one
for spicy food. Her idea of a good curry, was little more than a “no heat”
stew. But over the years my influence has slowly rubbed off on her, so much so
that she occasionally surprises with Jalapeños stuffed with sun dried tomatoes
from our local grocer – that, and we have pepperdews and paprika chilli bushes
growing in the garden in abundance.
I made this recipe using some fresh chillies off of those
very bushes.
What you will need

3 x golden delicious apples
(small or two very large ones)

½ x cup sugar
·
2 x cups of water
·
2 x cloves of garlic
·
3 x cups of chopped
chillies of your choosing
Method:
I diced the apples
And chopped the garlic (which had also been growing in my
garden)
And I sliced up the chillies.
I then threw all of the ingredients into a sauce pan. I
bought it to a boil and then let it simmer for 45 minutes (keep an eye on it in
those last 15 minutes. If it looks like you may run out of water, then take
your pan off the heat to prevent it from burning and consider your sauce it
done, don’t try to add more water).
I placed the cooked ingredients in the blender and gave it a
good whirl until it was nothing more than a nice thick sauce. I placed t in a
glass jar with the lid on and left it to cool at room temperature before
placing in the fridge.
I’m going to surprise my wife with a fresh bottle when she
gets home from work this evening, hopefully it will spice up her day and make
her smile.
