Simple Beet Kvass Recipe

Today, I'm excited to share one of the simplest and healthiest fermented beverages you can make—Beet Kvass. This nutrient-rich tonic is not only incredibly easy to make, but it also offers numerous health benefits. Whether you're new to fermentation or looking for a quick, effective health tonic, beet kvass is a perfect place to start!

Why Beet Kvass?

Beet kvass is made from fermented beets, resulting in a delicious, earthy beverage that is rich in probiotics and prebiotics. It supports digestive health, helps regulate bowel movements, and can even boost urinary tract health. For women, adding fennel seeds or fresh fennel root can make it an even more beneficial tonic for overall well-being.

But today, we’ll be focusing on the basic beet kvass recipe, which only requires three ingredients. Let’s get started!


Ingredients:

  • 2 cups of beetroot, cleaned and sliced into thick pieces
  • 1.5 liters of warm water (make sure it’s warm, not hot or cold, as extreme temperatures can negatively affect fermentation)
  • 1 tablespoon of salt (use a non-iodized salt like sea salt or Himalayan salt for best results)

Instructions:

  1. Prepare Your Fermentation Vessel
    Start by sterilizing your fermentation vessel. This could be a jar or a fermenting crock. Clean it thoroughly to prevent unwanted bacteria from spoiling your kvass.

  2. Add Beets and Salt
    Place your sliced beets into the sterilized jar and sprinkle in the tablespoon of salt. The salt helps create an environment where good bacteria can thrive and prevents harmful bacteria from taking over.

  3. Add Water
    Pour the warm water over the beets and salt mixture. Ensure that the beets are fully submerged, leaving some room at the top of the jar for the fermentation gases. Tip: Beets ferment very actively due to their high natural sugar content, so it’s wise to leave extra space at the top of your jar.

  4. Weigh It Down
    Weigh down the beets so they stay submerged under the liquid. You can use a fermenting weight, or, if you don’t have one, a sterilized glass or even a plastic bag filled with water. Keeping the beets under the water prevents exposure to air, which can lead to mold.

  5. Cover and Ferment
    Cover your jar with a cloth or towel and secure it with a rubber band to keep out any dust, insects, or debris. Place the jar on your kitchen counter at room temperature and let it ferment for about two weeks. During this time, you may notice bubbling, which is a good sign of active fermentation.

  6. Check for Overflow
    Beet kvass is a very active ferment due to the high sugar content in beets. To avoid any mess, place a bowl or plate under your jar to catch any potential overflow.

  7. Strain and Bottle
    After two weeks, your beet kvass should be done. The fermentation will slow down, and you’ll notice fewer bubbles. Strain the liquid into a clean bottle, leaving the beets behind. Store the bottled kvass in the refrigerator and enjoy a glass daily as a health tonic.
